Research activities

Cellular agriculture aims to produce meat with no animal involvement via in vitro cell culture and tissue engineering techniques, and possesses key attributes to overcome most issues associated with livestock meat. However, despite holding great promise to alleviate several environmental, animal welfare and public health problems, in vitro meat manufacture still faces numerous limitations, related with tissue scaffolding and biomaterials, culture media composition, starting cell source and bioreactor configuration. Hence, my works consists in trying to find the best options for each of the aforementioned challenges to design and develop a cost-effective scalable manufacturing platform for cultured meat production with similar appearance, texture, flavor and nutrition composition to conventional meat.
